Nothing sits at the pass

Tickets change colour as they age. An order approaching its time limit becomes visible from one end of the kitchen to the other, without anyone watching a clock.

Progressive colour code: Green under five minutes, amber under fifteen, red beyond.
Timer on each ticket: How long since it was placed, in plain figures.
Sound alert: When an order arrives, switchable station by station.
Marked ready in one gesture: The floor is told at the same instant.

The colour follows the time since the order was placed.

Shortages handled at the source

When something runs out, the kitchen flags it and it disappears from the menu at once. Nobody orders a dish you cannot serve, and nobody finds out at the moment of serving it.

Removed in one gesture: The dish leaves the guest menu within the second.
Low-stock threshold: A badge warns you before the quantity reaches zero.
Automatic removal: At zero the dish switches itself off.
Out of the total: A dish withdrawn mid-order is not charged for.
